Carlos, born in Lima-Peru has had an interest in culinary arts since very young. In 2011, he decided to chase the American Dream and flew to Miami with a couple hundred dollars, worked at a restaurant 7 days a week.

 

Shortly after in 2012 Carlos and his wife Michelle founded Taipa Peruvian Food Truck and a few years later moved on to open their first restaurant. Taipa has been one of the few restaurants in the market who has kept the Traditional & Authentic Peruvian dishes that have taken after the restaurants name, Taipa, which is a Peruvian term that means “Abundantly Served”.
